Granny Mati’s Drinks
KOMBUCHA
How to drink kombucha
The drink has to be cold, at an ideal temperature of 3 °C. It’s a ‘living’ drink, meaning it has to be conserved in a fridge to slow down the fermentation process and avoid it turning in an alcoholic drink. Kombucha is an alternative non-alcoholic drink because of its very low alcohol percentage, under 0.5%. Although it is very low, it’s advisable for pregnant and breastfeeding women to avoid drinking kombucha until this is no longer an issue. Similarly it’s better for children under 9 years old to abstain from drinking kombucha.
Shake the kombucha bottle gently before drinking. This is not necessary for ginger beer nor hibiscus tea. Once you open the bottle consume in little time. It’s advisable to not have two bottles open at the same time. Finish one and then open the other. Daily kombucha intake can be a small bottle or a 250 mL cup, preferably after a meal. You can drink up to 1 liter of kombucha per day without problems.
The brown yeasts in the bottles are something natural and organic of the drink. It helps in the process of producing probiotics. If you wish, you can filter it. These are some recommendations from GMD on enjoying your drinks.

Our Process
fermentation
In our Caribbean culture many people know what fermentation is. It is the transformation of sugar into alcohol and/or vinegar. In our case the natural fermentation process of organic tea to produce our kombucha through yeast, produced by a scoby (symbiotic culture of bacteria and yeast).
Healthy
probiotic
We know probiotics as the bacteria that benefit your health. They defend our intestines and protect our body from illness, since they help our body to better assimilate the nutrients we ingest. Probiotics help eliminate, in a natural way, the toxic byproducts of excessive medicine consumption. They keep our digestive system clean and they are a fabric of vitamins. Meaning, they help improve our digestion. They strengthen your immune system and help you produce enzymes.
What is
Scoby
Granny Mati’s Drinks accomplishes the natural fermentation process of organic tea for our Kombucha through yeasts, to produce a scoby (a symbiotic culture of bacteria and yeast). Kombucha is a fermented drink, fresh and delicious, but it is legally not an alcoholic beverage.
Why
yeast
Yeasts are a naturally good thing, as they produce benefits, among others the probiotic benefits, of kombucha. If you do not keep your kombucha refrigerated, the fermentation process will go on and the yeast will keep growing. When you see yeasts in the bottle, it shows that the kombucha is natural and organic, without artificial additives nor preservatives, meaning it’s raw or unrefined. This is perfectly safe for your body. You can shake the bottle softly to break down and mix in the yeasts with the drink.
